This is the best chili recipe that I know. It was well received at a Buffy Night at Kim's.

SERVES 6 -8

Ingredients

  • 2 onions, chopped
  • 3 cloves garlic, minced
  • 4 strips regular sliced bacon

  • 1 lb lean ground beef
  • 1 lb ground pork

  • 1/2 can dark beer
  • 1/2 can beer
  • 1/2 can beef broth
  • 1/2 cup strong coffee
  • 1/2 cup gold Tequila
  • 1/2 cup Burgandy or red Zinfandel wine

  • 4 chili peppers, chopped

  • 1 x 14 1/2 oz can diced tomatoes
  • 2 x 6 oz cans tomato paste

  • 3 1/2 tsp Sriracha sauce
  • 2 TBSP brown sugar
  • 1 TBSP cumin
  • 1 TBSP cocoa
  • 1 TBSP grated ginger
  • 1 tsp oregano
  • 1 tsp cayenne
  • 1 tsp coriander
  • 1 tsp salt

  • 2 x 15 oz cans kidney beans
  • 2 x 15 oz cans pinto beans

Directions

  1. Heat bacon until crispy, then set aside, saving bacon grease
  2. Brown onions, garlic in bacon grease, and remove to cooking pot
  3. Break bacon into little bits and add to cooking pot
  4. Brown beef and pork, then combine with previous ingredients
  5. Add beer, broth, coffee, Tequila, wine, drained tomatoes, tomato paste
  6. Add spices, and chili peppers
  7. Drain 1 can of kidney, drain 1 can of pinto beans; add both to pot
  8. Simmer for 1 1/2 hours
  9. Drain remaining cans of beans, and add to pot
  10. Simmer another 30 minutes
